Tuesdays With Dorie – Mocha Brownie Cake.

One word: WONDERFUL!!!! Certainly, the best chocolate dessert since for a while, and perhaps my favorite of Dorie’s book “Baking with Julia”. The recipe wasn’t very difficult, however it takes a little time. It’s divided into several parts, with resting time. For my part, everything went without trouble, and even quite easily. I made individual cakes, I reduced the recipe (used 2 eggs) and obtained 5 muffin size cakes.      The cakes were incredibly moist, soft, chocolaty and not at all heavy. I... [Lire la suite]

Tuesdays With Dorie – Chocolate-Mascarpone Cheesecake.

Whaoo!!! When I read that the recipe chosen for this week was a cheesecake, I was a little scared! I've never done it before!!! So it was a bit challenging this week!!!! Let’s go!!! It is written: “luscious”, “chocolate”, “creamy”… Lots of words very tempting not possible to resist longer!! I decreased the recipe, for less servings (I used 1 egg, and adapted it for the other ingredients). For me, it serves 6… The batter wasn’t difficult, however the baking ask (me!!!) for a lot of attention!!!! I have some trouble with the “Bain... [Lire la suite]

Baked Sunday Morning: Lime Angel Food Cake.

I LOVE limes. I like their fruity, tangy and beautiful floral aroma. I wasn’t a big limes accustomed, cause it wasn’t easy to buy them, two reasons: not very common on our stalls and rather expensive. Since several years, it seems that, this lovely fruit democratizes!! And good for us!!!!! So now, I never hesitate when I have the opportunity to use it!! And this Sunday is a good opportunity to prove it!!! The recipe was quite easy and didn’t require lots of ingredients!! I halved the recipe, used a bundt cake pan, and reduced... [Lire la suite]

Tuesdays With Dorie – Vanilla Chiffon Roll.

This week, the recipe called for a little more work, not complicated, with a little planning and a little waiting time in the fridge, you obtain a very generous and delicious dessert! The Chiffon Vanilla Roll, recipe chosen this week, is divided in three part : the cake, the mousse and the rolling/chilling time. I divided the recipe in half, and still obtained 6 nice portions (not greedy enough????). I also lightened the mousse, decreasing the amount of heavy cream and adding instead whipped egg white (half / half). The result... [Lire la suite]

Tuesdays with Dorie – Boca Negra.

I made a lot of chocolate cakes, and I have one recipe I'd like to my favorite that I made when I want a good chocolate cake than everybody can appreciate, even the non big chocolate fan. In short terms: a good hit! When I made a new one I hope everytime to do something better, different or at least as good, and this time my wishes were fulfilled. The result, a cake: different of course, better probably, so delectable and savory!!!! The cake is chewy, a little dense but not heavy, not too sweet, and with a good deep... [Lire la suite]

Tuesdays with Dorie – Gingerbread Baby Cakes

This week TWD recipe was the Gingerbread Baby Cakes. I was very interested by the recipe, I love spices, and I use them regularly in pastry but this time I have to confess, I don’t really like so much the result!!! The taste is too strong, almost knocking out, and too aggressive for me. However, the texture was good, the cakes were moist and soft. To bake, the recipe was pretty easy, I added some candied orange peels and sprinkled the top with some sliced almonds. I also reduced the quantities and made four cakes in muffin tins,... Louise Cake

I travelled few months in New-Zealand, while I visited a wonderful country, met generous people, I discovered a simple and tasty cooking, inspired by various world cooking! This recipe comes from my journey, and is an old fashioned New Zealand favorite. It’s made with a layer of biscuit topped with raspberry jam, and coconut meringue, then baked in the oven. Of course you can substitute raspberry jam by any of your favorite jam or marmalade. The next time I want to try with lime curd, with the coconut I think it must be nice... [Lire la suite]
